It’s officially cooking baking season, and what better recipe to start with than a healthy, gluten free, paleo sugar cookie recipe. 

While they are notorious for being baked, cut out, and iced into pretty Christmas patterns you can still make regular circle cookies and skip the decorating if desired. Don’t forget to top each one with the simple icing to make them extra special! 

Feel free to decorate with melted chocolate and sprinkles to add more holiday spirit!

Ingredients Needed: 

  • almond flour
  • baking soda
  • baking powder
  • salt
  • coconut oil
  • coconut sugar
  • vanilla extract
  • egg

For the Icing: 

  • coconut butter
  • maple syrup

How to Make Paleo Sugar Cookies

Sift together the baking soda, powder, flour, and salt in a small bowl and set aside. 

Combine the coconut oil, vanilla, and sugar in a large mixing bowl. Beat using an electric mixer until creamy. 

While mixing on low speed, add the egg. 

Add the flour mixture to the wet ingredients in batches until all of the ingredients are combined.

Cover the sugar cookie down with plastic wrap and chill in the refrigerator for at least 1-2 hours or overnight.

After the batter has chilled, preheat the oven to 350 degrees. 

Roll out the cookie dough on wax paper. Use cookie cutters to make desired shapes. To make regular cookies, roll the dough into a log and slice them. 

Place each cookie on a baking sheet leaving 2 inches between each one. Bake until golden brown. 

Once done, allow the cookies to cool on the pan for 15 minutes. Melt the icing ingredients together and spread on top of each one. You can also transfer the icing to a piping bag and decorate that way. 

How to Store Homemade Sugar Cookies 

Keep the leftovers in an airtight container or plastic bag for up to a week on the countertop. 

To freeze, add a sheet of parchment paper between each layer and freeze in bag or container. 

You can also freeze unbaked cookies or the dough. If storing the dough before cutting the cookies out, form into a log, wrap in plastic wrap, then place it in a freezer bag.

Ingredients
  

Paleo Icing:

  • 1/2 cup coconut butter melted
  • 1 tbsp maple syrup

Instructions
 

  • In a small bowl, sift together the almond flour, baking soda, baking powder, and salt. Set aside.
  • In a mixing bowl, combine the coconut oil, sugar and vanilla extract. Beat the ingredients together on medium speed until creamy.
  • Add in the egg, and beat on low speed until combined.
  • Working in batches, add the flour mixture to the coconut oil mixture. Beat the ingredients on low until they are combined and smooth.
  • Place the dough in a bowl with a lid.
  • Place in the fridge to chill for at least 1 to 2 hours or overnight.
  • Once the batter has chilled, preheat the oven to 350 degrees Fahrenheit.
  • Roll the dough out on wax paper with a rolling pin and cut into desired shapes if making for the holidays, OR roll into a log and slice into cookies. Place the cookies about 2 inches apart on your baking sheet as they will spread out slightly.
  • Bake for 10-12 minutes or until the cookies are golden brown.
  • Remove the cookies from the oven, and let them cool on the pan for 15 minutes.
  • When the cookies have completely cooled, melt together the coconut butter and maple syrup for the Paleo icing.
  • Place the icing into an icing bag or spread directly onto the cookies.
