No Bake Nutella Cookies

No bake Nutella cookies are chocolatey, full of hazelnut flavor, ready in 15 minutes and gluten free! The perfect holiday cookie for all occasions!

No bake cookies are kinda my thing recently! I know that may seem weird as we are approaching the official holiday baking season. But after I made a batch of no bake pumpkin cookies, I wanted something similar to the ones that are a little more old-school! 

While the traditional version has peanut butter, I decided to level up and go with Nutella. You can use any hazelnut spread, though! This spread takes the place of the peanut butter, and you may be even more addicted to these than the original recipe.

Ingredients Needed 

  • coconut sugar – you can swap for granulated sugar if that’s all you have
  • unsweetened cocoa powder
  • milk of choice – any variety will work, just don’t use a sweetened milk 
  • unsalted butter – if you have salted butter you may want to omit the other salt in this recipe
  • vanilla extract
  • kosher salt
  • Nutella
  • coconut flour
  • quick oats – use gluten free oats if desired

How to Make Nutella No Bake Cookies 

Place a sheet of wax paper on a baking pan and set aside. 

Add the coconut sugar, cocoa powder, milk, and butter to a saucepan over medium heat. 

Bring to a boil, boil for 1 minute. 

Remove from the heat and stir in the vanilla, salt, Nutella, flour, and oats. Stir constantly until combined. 

Allow the mixture to cool for 5 to 10 minutes. 

Drop spoonfuls onto the prepared pan and chill in the fridge to finish cooling.

Tips for Making and Storing 

While you are boiling the mixture, be sure to stir constantly. 

Don’t skip the cooling time before placing the cookies on the pan. This makes sure that won’t be too runny. 

Store leftovers in the fridge for up to 2 weeks or on the counter for up to 5 days. 

Can you freeze these no bake cookies? 

Yes, but they are definitely better when they are fresh! If you know you aren’t going to eat the entire batch in a couple of days you can freeze them. 

Are these cookies vegan friendly? 

They are as long as you use plant-based milk and vegan butter.

Ingredients
  

  • 1 cup coconut sugar
  • 2 tbsp unsweetened cocoa powder
  • 1/4 cup milk of choice
  • 1/4 cup unsalted butter
  • 1/2 teaspoon vanilla extract
  • pinch of kosher salt
  • ½ cup nutella
  • 3 tbsp coconut flour
  • 1 1/2 cups quick oats

Instructions
 

  • Line a baking sheet with wax paper and set aside.
  • Over medium heat, add coconut sugar, cocoa, milk and butter to a pot. Bring to a boil, and boil one full minute.
  • Remove from heat. Stir in vanilla, salt, Nutella, coconut flour, and oats. Stir until combined.
  • Allow to cool for 5-10 minutes. You don’t want it to be runny when you place it on the wax paper.
  • Once semi-cooled, drop by spoonfuls onto waxed paper and place in the fridge to cool completely.
  • Store in the fridge and serve cold!
