Just in time for Valentine’s Day are these delicious raspberry blondies! I’m in love with the festive color and being able to add fruit into a dessert! We couldn’t forget the chocolate of course! But this time I am using white chocolate because let’s face it…those two just go together! Speaking of white chocolate, you have to try my Oatmeal Cranberry White Chocolate Bars!
Raspberries are actually really low in calories and are full of antioxidants, fiber, and vitamins. Another good thing about raspberries is that they are low in sugar, unlike other fruits!
Know that this blondie recipe is super easy to make and is ready in about 30 minutes! Not to mention we don’t need many kitchen tools and gadgets! But if you are like me and addicted to kitchen stuff, you should see what’s in my Amazon store! Is a Blondie Like a Brownie?
This is so funny because if you have never made blondies before most people are like what the heck is that, and does it taste like a brownie.
So brownies are usually always made with a cocoa base which gives them that chocolatey, fudgy flavor. Blondies are made with a batter similar to a cake or cookie but still have the texture of a brownie.
Also, blondies are always lighter in color than brownies, because recipes typically don’t call for cocoa powder.

Ingredients for Raspberry Blondies with White Chocolate
Coconut oil – you want the kind that is solid at room temperature. We are going to melt it then let it cool before adding it to our blondies.
Applesauce – be sure to check the label for added ingredients. Try to get unsweetened if you can!
Coconut sugar – if you have seen me on Instagram you know that baking with coconut sugar is my favorite, just because it’s healthier and you can’t taste the difference when comparing to regular table sugar.
Vanilla
Egg
White whole wheat flour
White chocolate chips – If you have never bought Lily’s chocolate, definitely check it out. She uses the most natural ingredients possible while staying non-GMO and gluten-free when possible. There’s also dairy-free chocolate too!
Raspberries – feel free to use fresh or frozen berries

What’s the Difference Between White Whole Wheat Flour and Whole Wheat Flour?
You can use these interchangeably in a 1:1 ratio, but the major difference is that white whole wheat flour is milder in taste, not as nutty, and the color. One of the main differences between whole wheat and white flour is the fiber content. Whole wheat flour naturally has the level of fiber found in wheat, while most of the fiber has been removed from white flour during processing. It also has more iron, calcium, protein, and other nutrients than white flour.
Can You Use a Different Kind of Chocolate?
Yes! Raspberries pair well with dark chocolate. You can definitely substitute dark chocolate chips or chunks for the white.

How To Make Blondies with Frozen Raspberries?
If you choose to use frozen raspberries, that’s okay you just want to make sure they are thawed first! Be sure to sit them out ahead of time or run water on them before using them in the blondies. Also, try to drain as much water from them as possible so you don’t add extra liquid to the blondie batter.

Raspberry Blondies
Ingredients
- 1/2 cup coconut oil melted and cooled
- ⅓ cup applesauce
- 1 cup coconut sugar
- 2 teaspoons vanilla extract
- 1 large egg
- 1 cup + 3 tbsp white whole wheat flour
- 1 cup white chocolate chips
- 3/4 cup fresh or frozen raspberries
Instructions
- Preheat the oven to 350 F.
- Grease and line an 8-inch square baking tin with baking or parchment paper.
- In a large mixing bowl, add the coconut oil, applesauce, and coconut sugar and gently whisk together. Add the vanilla extract and stir.
- Add the egg and mix until combined. Stir in flour and white chocolate chunks. Fold in raspberries. Pour the batter in prepared tin, smooth the top and place in the oven.
- Bake blondies for approximately 30 minutes or until golden on the edges and a toothpick inserted in the middle comes out clean. Leave the pan to cool completely. Cut into squares to serve.
