In my opinion, there’s nothing better than a white chocolate and cranberry combo. I mentioned before how my mom used to make oatmeal white chocolate cranberry cookies while growing up, (They’re what inspired my 5 Ingredient Cookie Dough Balls!) and I felt like it was time to bring the combo back!

These Healthy Oatmeal Cranberry White Chocolate bars are not only perfect for a snack, dessert or on-the-go treat, but they’re also super festive and perfect for the holidays!

These cookie bars are soft, moist and they remind me of fall or holiday season. They’re sweetened with just 1/2 cup of coconut sugar, and the remaining sweetness comes from the cranberries and chocolate.

You could even add a little cinnamon or nutmeg if you really wanted to emphasize the fall flavors.

I’ve also been loving white chocolate chips in my baked goods lately. Not sure what it is, but they always seem to come out to play during the holiday season.

  • Whole Wheat Flour
  • Quick Cooking Oats
  • Coconut Oil
  • Coconut Sugar
  • Baking Soda
  • Salt
  • An Egg
  • Vanilla Extract
  • Milk of Choice
  • White Chocolate Chips
  • Dried Cranberries

How To Make Healthy Oatmeal Cranberry White Chocolate bars

  1. Preheat oven to 350F and grease an 8×8 inch baking pan with cooking spray.
  2. In a medium bowl mix together flour, oats, baking soda, and salt.
  3. In a large bowl beat your coconut oil, coconut sugar, egg, and vanilla.
  4. Add dry ingredients into wet and stir in almond milk. Fold in white chocolate chips and dried cranberries.
  5. Pour batter into prepared pan; spreading evenly with a rubber spatula.
  6. Bake for 14-17 minutes. Let oatmeal bars cool and cut into the desired size. I cut mine into 12 squares.

  1. I added cinnamon. Very easy recipe. Great taste. I also used a 9×9 pan so there are more crispy edges . Used 6 tablespoons light brown sugar instead of coconut sugar. Light brown is sweeter than coconut.
