There are a million and one ways to dress up your veggies, but today I wanted to put the spotlight on this Lemon Tahini Collagen Dressing — aka a protein packed, healthy salad dressing recipe that’s literally ready in minutes.
I’ve teamed up with Vital Proteins to develop several recipes for you all, and I was REALLY trying to think outside of the box with this one!
I’m an avid user of Vital Protein Collagen Peptides for a lot of reasons.
Some of my reasons for using their collagen is because I like to run long distances and it helps with joint pain a reducing inflammation! I’ve found it to be pretty helpful in that area, along with aiding my digestion before I go for a run.
I always add 1-2 scoops to my morning oatmeal (plus 1-2 tsp chia seeds and lots of cinnamon) because it packs in 20 grams of protein!
I decided to create a protein-packed salad dressing using collagen because why not!?
My husband, Michael, and I tend to have a couple vegetarian dinners every week and I knew this would be the perfect addition to one of those meals!
I added 3 scoops of collagen to this dressing which means after you combine the protein from the tahini, collagen and nutritional yeast, there’s over 50g of protein per jar — say what!
This dressing is also on the thicker side, so it’s great for dipping veggies or adding it as a spread on sandwiches!

This Lemon Tahini Collagen Dressing is savory, tart, refreshing + full of flavor. I served mine over some spicy baked chicken, spinach, green beens + carrots with allll the lemon.
