Chocolate Chip Blender Protein Pancakes

If you have been around here at all, you know I LOVE easy recipes. Especially now that I am a mom, my time is more precious than ever. Which really means, I don’t want to spend it in the kitchen if you know what I’m saying.
Everybody loves when I come up with recipes that can be made in a blender. Why? Because cleanup is super minimal and it usually means that they are made fairly quickly.

Normally when you think about pancakes you are dragging out the griddle, cooking in batches, and trying to figure out how you are going to keep these babies warm until it’s time to eat. Not anymore, you can thank me later!

What You Need For Chocolate Chip Protein Pancakes
rolled oats – not steel cut oats and not quick cooking
banana
egg whites
vanilla protein powder – Orgain is a great brand that checks all of the boxes when it comes to nutrition. It’s also gluten free, vegan friendly, and non gmo. For a double chocolate pancake, use chocolate protein instead.
cinnamon
baking powder
salt
unsweetened almond milk
chocolate chips – if you need a healthy chocolate, go with Lily’s
How to Make Chocolate Chip Protein Pancakes

Add all the ingredients in order to your blender (except for the chocolate chips). Blend until the batter is completely smooth.

Fold in the chocolate chips.
Don’t forget the batter on the sides! Use a spatula to scrape the batter back down.
Let the pancake batter rest for about 5 minutes just so it has time to thicken.
Heat your skillet or griddle to medium heat.
Use about ¼ of the batter for each pancake.

Cook until they start to bubble, then flip and cook for another 3 to 4 minutes.
How to Freeze Protein Pancakes for Later
Even though these are super easy to make you may want to freeze them for later to make the process even more convenient.
Once they have completely cooled, place them in a freezer bag. If needed, separate the layers with parchment paper so they don’t stick together.
Reheat in the microwave or toaster and top with your favorites! If you have an air fryer you could also reheat them in there.

Chocolate Chip Blender Protein Pancakes
Ingredients
- 2 cups rolled oats
- 1 medium banana
- 1/2 cup egg whites
- 1/2 cup vanilla protein powder
- 1 tsp cinnamon
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup unsweetened almond milk
- 1/2 cup chocolate chips
Instructions
- In a blender, add all ingredients in order as listed except chocolate chips.
- Blend until completely smooth and fold in chocolate chips.
- Scrape down sides as needed.
- Let the batter rest for 5 minutes to allow it to thicken.
- Turn your skillet to medium heat. Pour batter onto a heated pan (~¼ cup per pancake) and cook for 3-4 minutes on one side. Flip and cook another 3-4 minutes.
- Serve immediately or freeze for later and enjoy!
