Dairy Free Banana Muffins | Made in a Blender!

Dairy-Free Banana Muffins are gluten-free, oil-free, and made in a blender! That’s right, no stand mixer needed and cleanup is a breeze! Only whole, simple ingredients used and ready in less than 20 minutes! These muffins are moist and delicious, including an oat topping that is to die for!

Gluten-free, dairy-free blender banana muffins, who would have thought that was even possible?! I am all about keeping the mess to a minimum in the kitchen because we all know baking is the fun part, followed by the dreaded cleanup process! 

By using my Ninja Kitchen, I don’t have to drag out any other appliances! If you don’t have a Ninja you can use whatever blender you would like. If you don’t have a blender, feel free to use your mixer!

If you have been around Hello Spoonful longer you know we love making delicious muffins, heavenly desserts, along with main courses, breads, and more! But you should know we always try to make the healthiest versions, by using only whole ingredients. 

When you are shopping be sure you are checking the labels. Some of the food companies are sneaky about advertising their products to be natural, but when it comes to the ingredients list there can be a ton of unnecessary additives! 

I always recommend places like Trader Joe’s (see my favorite products here)or Whole Foods because they are known for carrying whole ingredients. Other local markets are building these sections, but again just be careful when reading the labels! 

Now on to the good stuff!

What Do I Need to Bake Dairy Free Banana Muffins?

Oat Flour – don’t forget you can always make your own by blending gluten-free oats in your blender! The only catch here is to not use quick cook oats and make sure they are gluten-free. 

Bananas – You will want to use ripe bananas. This helps to sweeten muffins naturally! 

Other ingredients: baking powder, baking soda, cinnamon, salt, applesauce, honey, vanilla, eggs. 

For the Oatmeal Cinnamon Topping:

Coconut Oil – Warm the oil up and let it cool before adding it to the banana muffin batter

Others: Coconut sugar, oats, and cinnamon. 

The oatmeal topping is totally optional, but why would you not want it? 🙂

My Bananas Are Still Green, Can I Use Them To Make Blender Banana Muffins?

When it comes to making banana muffins and breads, you will want to use ripe bananas because they bring so much more sweetness and flavor than the green ones. 

Here’s a tip to ripen bananas on the fly. Warm them up for about 30 seconds in the microwave if they are borderline being ripe. 

If they are super green, lay them on a sheet pan, place in the oven on 325 for 15-25 minutes.

Tips for Dairy Free Blender Banana Muffins

  • When mixing in your blender or food processor, it’s very important that you DO NOT overmix! 
  • When storing your muffins, be sure to line them with a paper towel to soak up the excess moisture.
  • If you want to swap out the coconut oil, you can the measurement will stay the same, this goes for the coconut sugar as well.

Healthy Dairy-Free Blender Banana Muffins

Dairy Free Banana Muffins | Made in a Blender!

Ingredients
  

  • 1 3/4 cup Oat Flour
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/4 ts Salt
  • 1/2 tsp Cinnamon
  • 2 eggs
  • 2 large bananas ripe
  • 1 c Applesauce
  • 1/4 c honey
  • 1 tsp Vanilla

Optional Topping

Instructions
 

  • Preheat your oven to 350F.
  • Add muffin liners to a muffin pan. Spray the muffin liners VERY WELL. They are low fat so have a tendency to stick to liners. I recommend silicone liners or a silicone muffin pan if you have it.
  • Add all of the wet ingredients to your blender or food processer and blend until well combined/pureed. Add dry ingredients and blend for ~20 seconds, scrape the sides, then 20 more seconds. You want to do your best to not overmix the batter.
  • Melt coconut oil for topping. Add remaining topping ingredients to the bowl and combine.
  • Pour batter into liners. Top with oat topping. Bake ~18 minutes.
