Pumpkin Apple Cinnamon Oat Muffins

Thanksgiving and Christmas are right around the corner so naturally all things cinnamon, pumpkin, nutmeg, peppermint, BUTTER, sweet potato and basically all things good in the world are being thrown around the internet/pinterest/instagram.

I’m a major fan of fall recipes and fall foods too, but not always a fan of the amount of butter, sugar and cream that gets added to their already NATURALLY amazing flavor! Can you tell this is a theme here?

For example, sweet potato casserole is incredible (!!!) — i’m not saying it’s not, but somehow we include it as a side dish/vegetable when it’s honestly more rich than most desserts you’ll eat that day!

Maybe i’m a weirdo, but I just love roasted sweet potatoes and roasted vegetables that keep their yummy, natural flavor. I wasn’t always this way, but through intuitive eating and other lifestyle choices, my body reacts this way.

I made a pumpkin oatmeal chocolate chip muffin recipe about a month ago and it was a majorrrrr hit! I think the cinnamon streusel on top was what really won people over. That was my favorite part at least!

I decided to go for a less-sweet approach with these pumpkin apple cinnamon oat muffins.

So many times I find muffins end up basically being cupcakes by the end of the baking process. I wanted to keep this pumpkin apple oat muffin recipe relatively clean compared to other muffin recipes.

You might be thinking — “you used a CAKE mix, so how are these less like cupcakes!?” and that is a very valid question!

I prefer using this brand for my cake mix, so really it’s all you would need for the base of a muffin mix anyways! Flour, baking powder, vanilla, etc.

And as I said earlier… this recipe came from ingredients we already had in our kitchen! You may choose to make a homemade muffin base, but this is what worked for me 🙂

  1. warming it up and adding a little honey
  2. crumbling it up into my greek yogurt with some sauteed cinnamon apples on top
  3. OR going all in and heating it up, slicing it, adding some frozen yogurt and nuts for dessert!

Muffins are such an easy on-the go breakfast or afternoon snack at work.

Ingredients
  

  • 1 White Cake Mix
  • 15 oz Canned Pumpkin
  • 1/4 Cup Vanilla Almond Milk
  • 1/4 Cup Egg Whites
  • 1/2 tbsp Ground Cinnamon
  • 1/2 tbso pumpkin pie spice
  • 1 packet Apple Cinnamon Oatmeal I used quaker brand.
  • 2 tbsp maple syrup

Instructions
 

  • Preheat oven to 350 F.
  • Combine dry ingredients into one bowl -- cake mix, spices, oatmeal.
  • Combine wet ingredients into a separate bowl -- milk, egg whites, syrup, pumpkin.
  • Gradually add dry ingredients to wet ingredients while blending everything together on low without over-beating.
  • Once all ingredients are combined, pour cake mixture into a greased cupcake pan, or into cupcake liners.
  • Bake for 12-15 minutes or until an inserted toothpick comes out clean.
  • Eat while warm or let cupcakes cool to enjoy over the next couple days. Muffins taste best either immediately out of the oven, or the next day once the fruit has set.
  • Pro tip: slice muffins in half, toast and add a big spread of your favorite nut butter!
