Healthy Flourless Peanut Butter Protein Cookies

My mom is known for her BOMB cookie-baking abilities.

In grade school I could trade one single cookie for three pizza Lunchables and a Flintstones ice cream push-pop. That’s how delicious and coveted they were.

One of my favorite cookies she made was her peanut butter chocolate chip cookies.

Which is exactly what inspired this healthy version of the recipe!

Healthy Flourless Peanut Butter Protein Cookies

They’re the perfect mix of crispy edges, soft middles + chewy peanut buttery goodness… Not to mention the chocolate coating.

​In the past, I have also used powdered peanut butter to make No Bake Chocolate Chip Cookie Dough Balls for an extra punch of protein. 

What makes these peanut butter protein cookies healthy?

These healthy cookies are refined sugar-free and higher in protein than most peanut butter cookies.

Protein is essential to keeping us full and pairing it with healthy fats like natural peanut butter, you’ve got a winning combo!

The more grams of protein we can get in the better! Plus, it’s a great way to enjoy a sweet treat, but still getting the nutrients you need.

What protein powder is best for baking cookies?

I like this brand of protein powder the best. It’s dairy-free, lactose-free, vegan, gluten-free, soy-free, and has no sugar added. But most importantly, it tastes great and they have lots of flavors to choose from!

Sometime whey protein powder has a funny taste when baking. 

Ingredients Needed

  • creamy peanut butter (crunchy peanut butter or smooth, but I used smooth) you could also experiment with using almond butter or sunflower seed butter next time.
  • coconut sugar – I like using this better than just white sugar. 
  •  egg
  • vanilla extract
  • unsweetened almond milk
  • protein powder – I used vanilla, but if you wanted more chocolate you can use chocolate protein powder. For those who like more peanut butter flavor, use peanut butter protein powder. 
  • ground flaxseed
  • Dark Chocolate Chips
  • Coconut Oil

​How to Make Easy Peanut Butter Protein Cookies

Preheat the oven to 350 degrees and line two sheet pans with parchment paper. 

In a large bowl, combine the peanut butter, sugar, eggs, and vanilla. 

Slowly more in the milk, add the protein powder, then the ground flax until combined. 

​Use a cookie scoop to scoop out the dough into tablespoon portions. Place onto the cookie sheet and flatten. 

Bake for 10-12 minutes or until the edges are lightly golden brown. 

Cool on the pan for a few minutes then transfer to a wire rack. 

While they are cooling, add the chocolate chips and 1 tablespoon of coconut oil to a small bowl and melt. Then dip the baked cookies in and let them set on the pan until ready.

Ingredients
  

Dough

  • 3/4 Cup Peanut Butter
  • 1/4-1/2 Cup Coconut Sugar
  • 1 Egg
  • 2 Tsp Vanilla Extract
  • 2 Tbsp Unsweetened Almond Milk
  • 1/2 Cup plus 1 tbsp Protein Powder
  • 2 Tbsp Ground Flaxseed

Chocolate Coating Optional

Instructions
 

  • Preheat your oven to 350F and line two baking sheets with parchment paper and set aside.
  • In a mixing bowl, mix together peanut butter, sugar, egg and vanilla until combined. Gradually stir in your milk, mix in protein powder & flaxseed until all of your ingredients are combined.
  • Scoop mixture into tablespoon sized balls & flatten onto your lined trays. These cookies won't spread while baking so you'll want to flatten them out.
  • Bake your cookies for 10-12 mins or until edges are lightly golden. The cookies will firm up once they cool. if you want them crunchy bake them for 15 mins. Allow to cool before serving.
  • Optional: While cooling, melt 1 cup of chocolate chips with 1 tbsp coconut oil. Once cooled completely, dip into melted chocolate & set on wax paper to cool!
