Healthy Citrus and Herb Shrimp Sheet Pan Meal | Easy 30 Minute Meal

I decided to make a citrus and herb shrimp sheet pan dinner for Michael and I last week while he was at work and y’all – it was INSANE.
I’ve been loving sheet-pan meals recently (specifically this Honey Garlic Chicken and Veggies Sheet Pan Meal) for several reasons:
- Basically no clean up (thanks to the parchment paper!)
- They take NO time to make.
- You can get super creative with them.
- Awesome for meal prep.
- They look fancy and impressive but couldn’t be easier!
Asparagus and lemon are two of my favorite summer flavors/ingredients to cook with. (Check out this 20 Minute Pressure Cooker Spring Risotto if you agree!) Michael and I both love shrimp so when Minerva Dairy reached out to me about a collaboration, this recipe was a no brainer!
Minerva Dairy has a delicious garlic herb butter that added the perfect flavor and texture to this meal. They use farm-fresh milk, old fashion churns and wholesome ingredients. Not to mention it’s been passed down by 6 generations of Butter Makers. AKA they know what they’re doing!
I honestly think I could have just dunked the shrimp into the melted butter and been perfectly content!
Unfortunately, that wouldn’t make for the most interesting recipe so here we are 😉
For this 30 Minute Citrus and Herb Shrimp Sheet Pan Dinner you will need:
- Shrimp
- Garlic
- Paprika
- Italian Seasoning
- Garlic and Herb Butter
- Asparagus
- Lemon/Lemon Juice
- Pepper
- Onion
You will also need:
- Baking Pan
- Parchment Paper
- Spatula (to flip halfway through)
- Bowl for mixing sauce
- Whisk to stir

This dish is light, flavorful and satisfying! We served ours over a mixture of rice and cauliflower rice to keep it simple.
Not a fan of shrimp? This sheet pan recipe can easily be swapped for your favorite protein. Salmon would probably be my next choice 😉

Healthy Citrus and Herb Shrimp Sheet Pan Meal
Ingredients
- 16 oz Shrimp
- 16 oz Asparagus
- 5 oz Sweet Onion Sliced
- 2 Tbsp Minerva Dairy Garlic and Herb Butter Melted
- 1.5 Tbsp Lemon Juice
- 1 Tbsp Minced Garlic
- 1/4 Tsp Paprika
- 1 Tsp Italian Seasoning
- Parlisey To garnish
- Salt To Taste
- Cracked Black Pepper To Taste
- 1 Lemon To garnish
- 1 Lime To garnish
Instructions
- Prepare baking sheet with parchment paper and preheat your oven to 350F.
- In a small bowl, whisk together melted butter, garlic, lemon juice, Italian seasoning and paprika.
- Prepare your asparagus by washing, removing the ends and chopping into desired size. I chopped mine in half, but you could do thirds if you want smaller pieces. Slice onion if preparing your own. (I purchased pre-sliced)
- Place shrimp, onion and chopped asparagus in a single layer onto the prepared baking sheet. Pour butter mixture on top and gently toss to coat. I used my hands for this step.
- Place into oven and bake just until pink, firm and cooked through, about 10-14 minutes. Toss with a spatula or tongs halfway through, ensuring everything is evenly coated.
- Serve immediately. Garnished with parsley and sliced lemons and limes, if desired. Add salt, pepper and more seasonings to taste.

What a simple and fresh recipe. .this looks so good! I love its simplicity but also the green medley and the omega rich shrimp as a meat choice. I will definitely try this. Clean eating at its best! Thanks for sharing.
