Strawberry Yogurt Bars with Oatmeal Crumble

Strawberry yogurt bars bring together fresh berries with a creamy yogurt layer all nestled between oatmeal crumble.

They are a delicious way to celebrate spring and summer flavors!

Before we discuss this healthy strawberry oat bar recipe, let’s talk about muffins for a second. 

Everyone knows the BEST part of a muffin is the streusel topping that covers every ooey-gooey cakey muffin.

I’m completely guilty of taking off the top of a muffin and only eating that part.

(Side note: Turns out there’s a thing called “muffies” that are exactly that. GENIUS.)

So, for this easy strawberry oat bar recipe I took your favorite part and baked it into an addictive, sweet & tangy strawberry breakfast bar.

These bars are healthy because I used Organic whole milk strawberry yogurt and traded the oil for yogurt as well!

Using yogurt or applesauce instead of butter or oil is a great way to add protein to your baked goods and lower fat.

This healthy oat bar recipe is extra wonderful because you can use any of your favorite fruit-flavored yogurt and they’ll turn out equally mouthwatering.

Ingredients needed:

Strawberry Yogurt – you can use any fruit flavored yogurt or vanilla if you prefer!

All Purpose Flour – this makes for the best texture. Use gluten free 1:1 flour if you are gluten free

Quick Cooking Oats – do not use steel cut (unless you are making steel cut oatmeal cookies!)

Brown Sugar – can be swapped for coconut sugar

Cinnamon – adds the perfect warmth and spice

Baking Soda

Unsalted butter – can swap for vegan butter

Applesauce – be sure it has no sugar added!

Almond Milk – any dairy or non dairy milk will work

Granulated Sugar – I used white, but you can use any granulated sugar such as this zero calorie granulated sugar

One Egg white

Dried cranberries – any dried fruit can work

How to make strawberry yogurt bars:

Preheat oven to 325°F & Lightly coat a 9×9 rimmed baking sheet with nonstick cooking spray.

Whisk together flour, oats, brown sugar, cinnamon & baking soda in a large bowl.  

In a separate bowl, whisk together butter, apple sauce, and milk. Add wet ingredients to flour mixture & stir until crumbly. (Reserve ½ Cup of mixture for later) 

Press the rest of the mixture evenly into your pan to create the crust.

Whisk yogurt, sugar, 3 Tbsp flour, and egg white in a medium bowl. Stir in cranberries.

Pour evenly over the crust & sprinkle the reserved oat mixture on top.

Bake until edges are golden brown, 30-35 minutes. Cool completely and slice into bars.

  • 1 Egg white Large
