Thai Cashew Chicken
Better than takeout Thai Cashew Chicken is such an easy weeknight dinner and is ready in less than 30 minutes! Full of flavor and is great for meal prepping!
Many people use the terms Thai and Chinese interchangeably when it comes to Asian inspired dishes. But here’s the thing, when you are talking about authentic dishes, Thai seems to have more flavor and quite a kick, but not too spicy!

Most of the time there are more herbs and spices used in Thai dishes versus Chinese, especially if you are talking about takeout.
So I decided to kick the takeout to the side and get creative and make my own Thai Cashew Chicken using the healthiest ingredients I can find.

Ingredients for Thai Cashew Chicken
Vegetables: red bell pepper, broccoli
Spices: garlic, ground ginger, salt, black pepper
Sauces – sriracha or sweet chili sauce, soy sauce or coconut aminos if gluten-free
Oil – olive oil, coconut oil, or avocado oil will work
Cashews – I buy mine in bulk at Costco! It’s on my list of my Healthy Costco Must-Haves. Grab all-natural, this recipe has enough salt by using the other ingredients
Chicken – boneless, skinless breasts
Other Ingredients: honey, cornstarch, lemon juice or rice vinegar
You could also add in more vegetables if you like such as green onions, mushrooms, sweet onions, or other varieties of peppers.

Do You Have to Use a Wok?
No. Technically traditional Thai food is cooked in a wok because it gets so hot and as food is cooking you can stack it on the sides while the rest cooks in the bottom. The higher sides also protect against splatter.
Of course, you can use what saucepan you have!

How To Make Thai Cashew Chicken
Start by slicing your peppers, steaming your broccoli, and cut the chicken into bite-size pieces.
Add the chicken to the pan and season with salt and pepper. Then start making the sauce.
Whisk together the honey, soy sauce or coconut aminos, lemon juice or rice vinegar, minced garlic, sriracha or sweet chili sauce, ginger, and cornstarch. Set the sauce to the side.
Add the sliced peppers and cashews to the chicken and cook for a few more minutes.
Pour the sauce into the chicken mixture, after it thickens, take it off the heat and add in the steamed broccoli!

What Should You Serve Cashew Chicken With?
We always serve it over rice or cauliflower rice. Other ways to serve:
- As lettuce wraps
- Over Noodles
- On Quinoa
- Over a salad
- In a tortilla

Thai Cashew Chicken
Ingredients
- 1 tablespoon olive oil
- 1 and 1/2 pounds skinless boneless chicken breast cut into bite size pieces
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2/3 cup cashews
- 1 medium red bell pepper chopped
- 1/4 cup honey
- 1/4 cup soy sauce or coconut aminos if gluten-ree
- 2 tablespoons lemon juice or rice vinegar
- 2 cloves garlic minced
- 2 tablespoons sriracha or sweet chili sauce
- 1/2 tsp ground ginger
- 1 tablespoon cornstarch
- 2.5 cups broccoli steamed
Instructions
- Heat up oil in a saucepan. Add chicken and season with salt and pepper. Cook until done.
- In a small mixing bowl, whisk together honey, soy sauce, lemon juice, minced garlic, sriracha, ginger and cornstarch. Set aside.
- Add chopped pepper and cashews to chicken. Cook 2 to 3 minutes.
- Add the sauce to chicken, pepper, and cashew mixture and cook until the sauce thickens, about 3 to 4 minutes. Remove from heat.
- Add your steamed broccoli to the pan and stir evenly until coated in sauce.
- Serve over rice or cauliflower rice and enjoy!
