i haven’t been this excited to share a recipe with y’all since my dark chocolate chip sweet potato muffins!
These healthy oatmeal chocolate chip cookies are literally the BEST cookies i have ever made, and y’all, i’ve made a LOT of cookies.
They’re the perfect blend of flavors with a gooey tahini chocolate inside, slightly crisp outside and made with clean ingredients! They also have a boost of protein from the added collagen.

For this recipe I used a mixture of all-purpose flour, whole wheat flour (I used this specific brand) and rolled oats as the base.
The cookies are sweetened with natural sugars like coconut sugar and pure maple syrup, too! Well, and some dark chocolate chips.. but at least it’s the “healthiest” kind of chocolate.. right?
I haven’t tested the recipe with any other flours, so I’m not sure how they would turned out if you subbed anything. If you give it a try let me know how they turn out!
I also ran out to get an ice cream scoop JUST for this recipe because I wanted to make sure they were nice and thick!
I chilled the dough for about an hour and a half, scooped them out into pretty large balls and baked for roughly 12 minutes. Baking time will vary on your oven and cookie size 🙂

Healthy Oatmeal Chocolate Chip Cookies
Tahini, Collagen + Clean Ingredients

- 1/2 Cup Whole Wheat Flour *favorite brand linked in above copy
- 1/2 Cup White All-Purpose Flour
- 2/3 Cup Rolled Oats
- 1/2 Tsp Baking Powder
- 1/2 Tsp Baking Soda
- 1/2 Tsp Cinnamon
- 1/2 Tsp Salt
- 1 Scoop Collagen *favorite brand linked in above copy
- 1/4 Cup Coconut Sugar
- 3 Tbsp pure maple syrup
- 1 Egg room temperature
- 1 Tsp Vanilla Extract
- 1/2 Cup Coconut Oil Softened, but not melted
- 1/4 Cup Tahini *favorite brand linked in above copy
- 2/3 Cup Dark Chocolate Chips
Ingredients

- In a large bowl, whisk together wheat and white flours, oats, collagen, baking powder, baking soda, cinnamon and salt.
- In a small bowl, mix together coconut sugar, maple syrup, egg, vanilla, coconut oil, and tahini.
- Add wet ingredients to dry and stir until combined. Fold in your chocolate chips.
- Place dough in refrigerator for minimum 30 mins.
- Preheat oven to 350F and prepare baking sheet.
- Scoop onto prepared cookie sheet (I used an ice cream scoop to make them nice and thick!)
- Bake for 10-12 minutes. Let cool for 2 minutes before moving to wire rack to finish cooling.
