Crockpot Parmesan Garlic Chicken (healthy)
Healthy 7 ingredient crockpot parmesan garlic chicken, is savory, tender, full of flavor, and an easy one pot dinner that can be served any night of the week!
As the days are getting longer, we want to spend as much time as we can outside. This means less time in the kitchen, so the slow cooker is really coming in handy!

Ingredients Needed
- Chicken – we prefer using boneless skinless breasts.
- garlic salt, italian seasoning, garlic cloves
- olive oil – to sear the chicken with.
- baby potatoes – our side dish so we don’t have to make a separate one.
- Parmesan cheese – because it’s the best when using Italian seasoning.
How to Make Crockpot Parmesan Garlic Chicken
Combine the garlic salt and Italian seasoning in a small bowl.
Sprinkle half of the mixture over the chicken.
Add a tablespoon of oil to a large skillet over medium high heat. Once hot, sear the chicken for 2 minutes on each side or until its golden brown.
Stir together the remaining oil, seasonings, and minced garlic and toss the quartered potatoes in it.
Add the potatoes to the crockpot and place the chicken on top.
Cover and cook for 4 hours on low heat.
Sprinkle the parmesan cheese on top after 4 hours. Once it melts you are ready to serve!
Tips for Making
- Searing the chicken ahead of time locks in the flavors. If you want you can skip this step, but we really like the golden brown outside.
- We do not recommend using frozen chicken.
- Before adding the chicken to the skillet, pat it dry. This helps to cut down on the liquid it releases to get a crispy exterior.
Substitutions and Variations
- If desired, use chicken tenders instead of breasts. Chicken thighs could be used, but they have a little different taste and are not as lean as the breasts are.
- Green beans – toss some fresh green beans in for a 2 side meal.
- Potatoes – red skinned potatoes or yukon golds will work well for this recipe.
How to Store
Keep leftovers in an airtight container for up to 4 days in the fridge. You can also freeze crockpot garlic parm chicken for up to 2 months in a freezer bag. Allow it to thaw in the fridge overnight before reheating.

Healthy Crockpot Parmesan Garlic Chicken
Ingredients
- 4 boneless skinless chicken breast
- 1 teaspoon garlic salt
- 1 tbsp italian seasoning
- 4 cloves garlic minced
- 2 tablespoons olive oil
- 1 pound baby potatoes quartered
- 1 cup shredded Parmesan
Instructions
- In a small bowl, mix the garlic salt and italian seasoning together.
- Sprinkle half of the seasoning mixture on the chicken breast.
- In a medium skillet over medium high heat, add in 1 tablespoon olive oil and sear chicken breasts for 2 minutes or until golden.
- Combine the remaining seasoning mix with the minced garlic and remaining oil.
- Quarter your baby potatoes.
- Toss the potatoes with the seasoning mix and place in the bottom of your slow cooker.
- Add the chicken on top of the potatoes.
- Cook on LOW heat for 4 hours.
- After cooking time is up, sprinkle with parmesan cheese and allow to fully melt on top before serving.
- Garnish with your favorite herbs, serve, and enjoy!
