Gluten Free Crunchy Peanut Butter Balls

I’m not sure why it took me so long to jump on the cookie dough/bliss ball bandwagon, but I’m just glad I found my way eventually.

No-bake energy balls couldn’t be easier to make, require fewer ingredients or be more convenient!

A few weeks ago I shared these 5 Ingredient No Bake Cookie Dough Balls and just last week I whipped up these Avocado Matcha Balls.

However, this week I’m introducing you to my flourless, no-bake crunchy peanut butter balls!

Gluten Free Crunchy Peanut Butter Balls

For these gluten-free crunchy peanut butter balls, I used powdered peanut butter in place of any flour or flour alternative. I’m not the biggest coconut flour or almond flour fan, but it turns out powdered peanut butter works out perfectly in place of flour in these cookie balls!

I’m a big fan of adding powdered peanut butter to my oatmeal in the morning, as I’ve shared plenty of times!

Not only do I add powdered peanut butter to my oatmeal, but I also love adding it to my yogurt, smoothies and ice cream! It adds the perfect touch of peanut butter flavor to any recipe.

Gluten-Free Crunchy Peanut Butter Balls

For These No-Bake Crunchy Peanut Butter Balls, You Will Need:

  • Powdered Peanut Butter
  • Peanut Butter (The drippy kind)
  • Honey (I used manuka)
  • Coconut Oil
  • Rice Crisp Cereal (I used Koala Crisps)

You Will Also Need:

  • Food Processor
  • Containers for storing in the fridge

Gluten Free Peanut butter Balls

I’ve been packing these no-bake crunchy peanut butter balls in my lunch for work, having them as an afternoon snack with my coffee and even grabbing a few as I head out for work in the morning. I love how easy and convenient they are for on-the-go snacking.

I’m a sucker for a good crunch, but if you want to make this recipe your own, feel free to swap out the rice crisp cereal for chocolate chips, dried fruit or leave them plain!

Gluten-Free Crunchy Peanut Butter Balls

Crunchy Peanut Butter Balls | No-Bake, Flourless + Gluten-Free

Servings 12 Balls

Ingredients
  

  • 1/2 Cup Creamy Natural Peanut Butter The drippy kind
  • 1 1/4 Cup Powdered Peanut Butter I used PB2
  • 5 Tbsp honey I used manuka
  • 1 Tbsp Coconut Oil
  • 1/2 Cup Rice Crisp Cereal I used Koala Crisps

Instructions
 

  • Place all ingredients except rice crisp cereal in your food processor and blend until well combined.
  • Pour in 1/2 cup rice crisp cereal and fold in with a spatula. Be careful not to break the cereal crisps, but rather mix them into the dough.
  • Roll into balls and serve immediately or store in an air-tight container in the fridge.

  1. If you want to save money buy the rice crisp cereal from aldi’s it says gluten free in big pictures and is very good
