Peanut Butter Cookie Sandwiches
Peanut Butter Cookie Sandwiches are the Nutter Butters! The peanut butter flavor is paired up with a creamy filling and chewy cookies!

When in doubt, more peanut butter right? That is exactly what we want in these peanut butter sandwich cookies! My version is a great alternative to the classic, processed Nutter Butters you had when you were a kid!
My spin on it? We are using whole ingredients and you only need 7 of them! You probably won’t even need to run to the store, because most of these ingredients are pantry staples!

Ingredients for Peanut Butter Cookie Sandwiches
For the cookies:
Peanut butter – if at all possible use creamy, natural. You guessed it, my favorite is Trader Joe’s because it has the perfect amount of salt!
Coconut sugar – if you don’t have coconut sugar, you can replace it with table sugar, but this is healthier
Egg
Vanilla extract
Baking soda
Salt
For the filling:
Peanut butter
Pure maple syrup – organic is the best! The darker the syrup the more natural it is!
Coconut flour
Vanilla extract

How to Make Peanut Butter Cookie Sandwiches
Combine all of the cookie ingredients into a medium mixing bowl. Mix together well. You can use a mixer or hand mix them.
Then using a large spoon or a cookie scoop, add the cookie dough to a baking sheet. If you are using a cookie scoop, press down slightly to flatten them out a little bit. Go ahead and bake those at 350 degrees for about 7 minutes.
While the peanut butter cookies are baking, combine the filling ingredients into a bowl and mix well using a mixer.
Flip half of the cookies over (this will be the bottoms) and add a dollop of the peanut butter filling. Do this by using a spoon or piping bag if you have one. Then take the remaining cookies and squish them together!

How To Store Sandwich Cookies
Place them in a single layer in an air-tight container and store them in the refrigerator for up to 7 days, if they last that long!

Can You Freeze Them?
Yes! Once you have assembled the cookies, add them to a freezer bag. Separate with parchment paper if needed. You can also leave them on the cookie sheet and place in the freezer for about 30 minutes, then add them to a freezer bag. This is also known as flash freezing.

Peanut Butter Cookie Sandwiches
Ingredients
Cookie
- 1 cup creamy peanut butter
- 1 cup coconut sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
Filling
- 3/4 cups natural peanut butter
- 2 tablespoons pure maple syrup
- 1 teaspoon coconut flour
- 1/2 teaspoon vanilla extract
Instructions
- Combine all cookie ingredients in a mixing bowl and stir until smooth.
- Bake at 350 for 7-8 minutes.
- Allow to cool.
- While cookies are cooling, place filling ingredients in a bowl and mix with a hand mixer or standing mixer until mixture thickens and is evenly combined.
- Place a dollop of filling on one cookie (flat site) and press a second cookie (flat side) on top.
- Place cookie sandwiches in a single layer in an airtight container in the refrigerator for up to 7 days.
