They’re filling, tasty, healthy, and not to mention, gorgeous!
These stuffed peppers are great for hosting a crowd or preparing for meal prep at the beginning of the week.
Can you freeze stuffed peppers?
Yes! If you’re looking to prepare them ahead of time, you can definitely do so. They retain their flavor and texture well in addition to holding their shape.

Personally, I like making these stuffed peppers at the beginning of the week as part of my meal prep menu.
They’re surprisingly delicious when eaten cold. I like to add my Vegan Avocado Cream Sauce or fresh avocado to sneak in some healthy fats and make the meal complete.
Do I need to cook my meat before filling my stuffed peppers?
For this particular recipe, I chose to cook the turkey filling on a skillet beforehand and stuff the peppers with the cooked filling.
I wanted to make sure the turkey absorbed all the tomato juice and seasonings before adding them to the peppers.
There are some recipes that use uncooked meat and it works just fine; however, you will need to increase your cook time in order to make sure the raw meat is cooked through.
Ingredients needed for these Whole30 Stuffed Peppers:
- Bell peppers
- Ground turkey
- Canned diced tomatoes
- Mushrooms (I used canned and drained them)
- Cauliflower rice
- Minced garlic
- Chili powder
I also added my Whole30 Avocado Cream Sauce and microgreens on top for a garnish and to pack in some extra nutrients. I grow my own microgreens at home!
They require almost zero sunlight, so they’re great to grow if you live in an apartment.
What should I serve with my bell peppers?
I served my stuffed bell peppers with my favorite dairy-free avocado cream sauce and it was a match made in heaven! This sauce is also Whole30 approved.
Make this recipe your own by:
- Swapping out the turkey for beef
- Adding sauteed spinach
- Adding black beans
- And if you’re not following Whole30, feel free to top with cheese, sour cream, or stuff with cooked rice.
This recipe feels like a meal on its own to me, but you could serve them with a salad, starch, or roasted vegetables. And of course, no meal is complete without dessert!
