Snickerdoodle Bars

Snickerdoodle Bars have the same traditional flavors as those sweet cinnamon sugar cookies but are easier to make and come out soft and chewy every time.

Who else loves snickerdoodle cookies but hates the thought of having to roll each one in cinnamon and sugar? That’s why I decided to turn them into cookie bars! 

If you’ve never made cookie bars before they are so simple! They turn out exactly like cookies except the dough goes in a pan and you simply slice once you are done! The prep work is so minimal and can literally be thrown together in just a few minutes!

Some recipes may tell you that it’s impossible to make the perfect snickerdoodle without cream of tartar, but I beg to differ. Here are 11 of the Most Delicious Snickerdoodle Cookies without Cream Of Tartar, and this recipe doesn’t require it either! 

Instead, we are using baking soda as the leavening agent and Greek yogurt to give them some tang so they don’t end up as just cinnamon cookies.

Ingredients Needed 

  • Butter – allow the butter to soften to room temperature before using. 
  • greek yogurt – go with a plain flavor of your favorite brand
  • coconut sugar
  • brown sugar – when measuring, pack the sugar into the cup
  • eggs
  • vanilla
  • white wheat flour
  • salt
  • baking soda – check the expiration date, this is what is going to keep the bars nice and fluffy! You want to replace baking soda and baking powder every 6 months.

How to Make Easy Snickerdoodle Bars 

Line a 9×13 baking pan with parchment paper and grease with cooking spray, then preheat the oven to 375 degrees. 

Cream together the butter, sugars, and greek yogurt in a mixing bowl using an electric mixer. 

Whisk in the eggs and vanilla. 

Combine the dry ingredients in a separate mixing bowl. 

Slowly add the dry ingredients to the wet and stir until smooth. 

Transfer the batter to the greased pan and top with additional brown sugar and cinnamon. 

Bake for 18-20 minutes. 

Remove from the oven and allow the bars to cool slightly before serving.

Storing and Freezing Instructions

Keep leftover snickerdoodle bars in the refrigerator for up to a week. 

To freeze, once the bars have cooled and been sliced, place them on a baking sheet into the freezer. After about 1 hour, transfer the bars to freezer bags or containers and freeze for up to 2 months. 

Thaw at room temperature or in the fridge overnight. You can also warm the bars in the microwave for about 20 seconds if you just can’t wait.

Ingredients
  

  • 2/3 cup room temp butter
  • 2/3 cup plain greek yogurt
  • 2/3 cup coconut sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 1 tbsp vanilla
  • 2 cups white wheat flour
  • ½ tsp salt
  • ¾ tsp baking soda
  • 1.5 tsp cinnamon

Instructions
 

  • Preheat the oven to 375F.
  • Line a 9×13 pan with parchment paper and spray with cooking spray.
  • To a bowl, add butter, greek yogurt and sugars. Cream together with a hand mixer.
  • To the bowl, mix in eggs and vanilla.
  • In a separate bowl, add your dry ingredients. Whisk until combined.
  • Add your dry ingredients to your wet ingredients and stir until smooth.
  • Pour batter into the lined baking pan.
  • Top with more brown sugar and sprinkle cinnamon on top.
  • Bake for 18-20 minutes at 375F.
  • Remove and allow to cool before slicing and serving.
