What’s better than freshly baked cookies? A cookie filled with chocolate and caramel chips! You know I am a total chocolate lover, but I realized I didn’t have any cookies with caramel! I had to fix this right away!

Even though desserts are often frowned upon when people start talking about being healthy, all of my recipes are made with whole ingredients! Not to mention in order to have a healthy diet and mindset, no food should be off-limits

Ingredients For Chocolate Chip Caramel Cookies

Flour – you can use all-purpose or oat flour. 

Cocoa powder

Baking powder 

Salt – you can use table salt or sea salt 

Eggs

Coconut sugar

Coconut oil 

Vanilla

Mini chocolate chips – a healthier option is Lily’s. Her chocolate is gluten-free and non-GMO!

Kraft Caramel squares – most of the time you can find these on the candy aisle. If your store doesn’t have these, you can find caramel baking squares in the baking section.

Making Chocolate Caramel Chip Cookies

Go ahead and preheat your oven then line your baking sheet with a silicone baking mat or parchment paper. 

Add the flour, cocoa powder, baking powder, and salt to a medium mixing bowl and set to the side.

In another bowl, beat the eggs and add in the coconut sugar, oil, and vanilla.

Now is where the magic starts to happen. Mix your dry ingredients into the wet ingredients and stir until they are combined.

Dice your caramel squares and fold them in along with the mini chocolate chips.

Cover your batter and place it in the refrigerator for at least 30 minutes.

Pinch off small pieces of the cookie dough and roll in balls. Place them on the baking sheet and flatten just a little. 

Now they are ready to bake! Once you are ready to serve, let them cool slightly before transferring them to a wire rack. If you move them while they are piping hot, they have a tendency to fall apart.

Can You Make These Vegan Friendly?

We haven’t tested that version, but the only swap you would need to make would be the eggs. Often times you can replace eggs with flax eggs and get the same results. If you make them like this, don’t forget to let me know how they turn out!

Instructions
 

  • Preheat oven to 350F and line baking sheet with parchment paper.
  • In a medium bowl, mix together flour, cocoa powder, baking powder, and salt.
  • In a large bowl, whisk together eggs, coconut sugar, coconut oil, and vanilla.
  • Add dry ingredients to wet, and stir until all combined.
  • Fold in chocolate chips and diced caramel squares.
  • Chill dough for at least 30 minutes in the fridge.
  • Roll cookies into balls, flatten them slightly, and place on a baking sheet.
  • Bake for 12 minutes. Allow to cool slightly before moving to a cooling rack and enjoy!
