I know you may think that sounds crazy, but when it’s blended you can use it for all kinds of recipes, like Buffalo Chicken Dip and this Cottage Cheese Mac and Cheese (High Protein)

Why I Love Air Fried Egg Bites 

  • A healthy breakfast idea that is quick and easy. 
  • Egg bites freeze well. 
  • Gluten free and low carb. 
  • Packed with protein

Ingredients Needed 

  • large eggs
  • shredded cheddar cheese
  • cottage cheese  – the trick is to blend it!
  • milk – use your favorite variety but definitely not flavored. I use skim milk to keep it macro friendly.
  • Salt and pepper
  • chopped fajita veggies – I used the frozen kind, you can also chop your own or grab a pack from the produce section that is already sliced.

How to Make Egg Bites in the Air Fryer 

Preheat the air fryer to 340 degrees. 

Crack the eggs into the blender. Add the cheeses, milk, salt and pepper to the blender.

Blend for 30 seconds. 

Place the silicone molds in your air fryer and divide the egg mixture across your molds.

Evenly disperse your veggies amongst the molds (~1 tbsp per egg). Sprinkle cheese on top of each egg muffin.

Cook in the air fryer for 5 minutes, stir, and cook another 8 minutes.

Cook just until eggs are set (they will continue cooking a little bit once removed.

Rest 5 minutes before removing from molds.

Allow the egg bites to cool for 5 minutes before serving.

Tips for Making Air Fryer Egg Bites

  • Avoid overcooking the egg bites. They will continue cooking while they rest. 
  • When adding different add-ins, be careful not to overload the bites. They might fall a part after cooking. 

How to store egg bites in the fridge

Keep leftovers in the fridge in an airtight container for up to 5 days. 

How to freeze egg bites

To freeze, place the cooled egg bites in a container or freezer bag.

Freeze for 1 month. To reheat, thaw overnight in the fridge.

Microwave for a few seconds or reheat in the air fryer.

Should you cook vegetables before adding to egg bites?

If you want the veggies to be a little more cooked, saute a batch before adding them into the molds. 

Can You Make Egg Bites in the Oven? 

Yes. Follow the same instructions, except place the egg mold on a baking sheet.

Bake at 350 degrees for about 20 to 30 minutes.

Ingredients

  • 3 tbsp milk of choice
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1/2 cup chopped fajita veggies mixed bell peppers/onion – i used frozen

Instructions
 

  • Preheat air fryer to 340°F.
  • Add eggs, cheddar cheese, cottage cheese, milk, salt, and pepper to a blender. Blend ingredients together for 30 seconds.
  • Place the molds in your air fryer and divide the egg mixture across your molds. Evenly disperse your veggies amongst the molds (~1 tbsp per egg). Sprinkle cheese on top of each egg muffin.
  • Cook in the air fryer for 5 minutes, stir, and cook another 8 minutes. Cook just until eggs are set (they will continue cooking a little bit once removed. Rest 5 minute before removing from molds.
  • Serve immediately or store in the fridge/freezer for later. Can stay in the fridge for up to 5 days and in the freezer for 3 months.

    Fantastic recipe and I made these with my “carb addicted” granddaughters… recently both turned 6 and 8. They had fun cracking the eggs, mixing and pouring. I took these to the beach and we had them every morning til they ran out. We all loved them (grandpa) as well and they were asking for more. TY for this great recipe!
    I added bacon bits for flavor.
