Overnight Oats with Frozen Fruit

Overnight oats with frozen fruit is so easy to make, perfect for busy mornings, a great meal prepping idea, and the whole family will love it!

The morning time sure can be busy, especially when you have kids and a family. Even though my baby boy is still little and I don’t have to run out the door for school, I do know what it’s like to have to drop everything and tend to him. 

Most kids are starving when their feet hit the floor in the morning so, having something already made to grab and go can do wonders for both you and them! 

If you have smaller kids like me, I have been whipping up healthy muffins left and right for breakfast. So far, Isaiah’s faves are Veggie Egg Muffins and 3 Ingredient Vegan Baby Banana Muffins. These are both great ideas to make ahead for busy mornings.

Ingredients Needed

  • rolled oats
  • plain greek yogurt
  • almond milk
  • chia seeds
  • maple syrup
  • vanilla extract
  • cinnamon
  • frozen fruit
  • sea salt
  • peanut butter

How to Make Overnight Oats with Frozen Fruit 

Add all of the overnight oat ingredients directly into a mason jar or container that you can cover except for the peanut butter. Stir to combine. 

Place the lid on and chill in the fridge for at least 2 hours. 

Once you are ready to serve drizzle the peanut butter on top and enjoy! You can also warm them up in the microwave for a few seconds if you prefer.

Variations and Swaps 

Vegan-friendly version: omit the greek yogurt and use a plant-based milk

Gluten-free: be sure that the oats you use are gluten-free

Nut-free version: leave off the peanut butter or use a seed butter instead

  • You can use fresh fruit if you would like. 
  • If you don’t have maple syrup, you can swap it for honey. 
  • Be sure to use rolled oats, as the others can be really soggy and chewy. 
  • The chia seeds help to keep the oats thick and soak up some of the liquid, but ground flax could be used in place if needed. 

Add-In Ideas

You can add in just about anything you can think of, but here are some favorites. 

  • Chocolate chips – milk, dark, or white
  • Nuts – almonds, walnuts, pecans 
  • Dried fruit 
  • Protein powder
  • Honey
  • Caramel sauce
  • Fresh fruit such as apples and bananas (add these just before serving so they don’t turn brown). You can also mash the banana up and stir it in for natural sweetness
  • Seeds 

Storing Instructions 

As long as the frozen fruit overnight oats are in an airtight container or jar they will stay fresh for up to 3 days. 

This recipe makes one serving, so if you are meal prepping and making these ahead of time, be sure to have extra ingredients on hand. 

Freezing is not recommended as it will change the texture and consistency. Plus they are so easy to make, no need to freeze!

Ingredients
  

  • ½ cup rolled oats
  • ½ cup plain greek yogurt
  • 1/2 cup almond milk** or milk of choice; see note below
  • 2 tsp chia seeds
  • 1-2 tsp maple syrup
  • ½ tsp pure vanilla extract
  • ½ tsp cinnamon
  • ¼ cup frozen fruit
  • Pinch of sea salt

Instructions
 

  • In a mason jar or tupperware, mix all of the ingredients together except the peanut butter.
  • Cover with a lid and leave in the fridge for at least two hours.
  • Remove from the fridge when ready to serve and drizzle with peanut butter or top with more fruit, nuts, maple syrup, or anything you love! Add more milk if you like it thinner.

Notes

** Start with 1/2 cup and add more as desired after they have been in the fridge for 2 hours minimum.
