Brownie Baked Oatmeal

Brownie baked oatmeal makes for the sweetest breakfast and even better as a dessert! It’s gluten free, dairy free, and ready in 30 minutes!

I know we are all conditioned to think of brownies as a dessert, but what if it’s oatmeal? Does that mean we can eat it for breakfast? We think so! 

This tasty dish combines all the deliciousness of brownies with the health benefits of oatmeal. Picky eaters will be asking for more, so be prepared! 

Baked oatmeal makes great leftovers, so you can easily make a double batch and keep it for the rest of week.

Here are some of my other favorite brownie recipes to save for later: 

Ingredients Needed 

  • Oats – to keep this recipe gluten free, be sure to check the label. I like to use rolled oats. They have the best texture. Quick cooking oats get too soggy and steel cut oats are too chewy.
  • Banana – ripe bananas work the best, as they add natural sweetness. If you are using bananas that are not so ripe, you may need to add a little more syrup.
  • Almond Butter – can sub any nut or seed butter. Be sure it is the all natural, drippy kind!
  • maple syrup – honey can be substituted if needed. 
  • egg whites
  • almond milk or milk of choice
  • cocoa powder
  • salt
  • baking soda
  • vanilla
  • Chocolate chips – any variety is fine, for a sweeter version use milk chocolate chips.

How to Make Brownie Baked Oatmeal

Grease an 8×8 baking pan and preheat the oven to 375 degrees. 

Puree your bananas in a food processor or with a masher. 

Add the syrup, egg whites, almond butter, milk, and vanilla to the mashed bananas. Whisk together until the batter forms. 

Stir in the cocoa powder, salt, and baking soda. 

Fold in the rolled oats, and stir until combined. 

Transfer the batter to the grease pan, and sprinkle the top with chocolate chips. 

Bake for 25-30 minutes or until it’s cooked all the way through. 

Serve warm.

Baked Oatmeal Toppings

  • Drizzle with seed or nut butter 
  • Add a dollop of Greek yogurt or whipped cream. 
  • Top with fresh fruit and berries. 
  • For added sweetness, drizzle with more maple syrup or honey. 
  • Granola 
  • Chopped nuts or seeds
  • More chocolate chips or cacao nibs

How to Store 

Keep leftovers covered in the refrigerator for up to a week. Before serving, heat in the microwave until it’s warmed through.

  • 1 cup mashed banana
  • 1/3 cup maple syrup
  • 1/4 cup almond butter *
  • ¼ cup egg whites
  • 3/4 cup almond milk or milk of choice
  • ¼ cup cocoa powder
  • ¼ tsp salt
  • 1 tsp baking soda
  • 1 tsp vanilla
  • Chocolate chips

Instructions
 

  • Preheat your oven to 375°F
  • Grease an 8×8 baking pan.
  • In a mixing bowl or food processor, add your bananas and mash until smooth.
  • To the bananas, add maple syrup, egg whites, milk, and vanilla. Whisk everything together until a uniform batter forms.
  • Next, add in cocoa powder, salt, and baking soda.
  • Add in rolled oats and stir until combined.
  • Pour the batter into your prepared pan and top with chocolate chips.
  • Bake for 25-30 minutes or until cooked through.
  • Serve warm.

    I really liked this recipe! It was easy to make and the flavor turned out so yummy. I did over bake it a bit so it came out on the drier side but still tasted great!
