Before we get started I need to know… are you team waffles or pancakes!?

If you said pancakes, don’t leave just yet!

Why? Because these cheesy sweet potato waffles can easily double as a savory pancake recipe, too!

Savory sweet potato pancakes with a little grass-fed butter, turkey bacon, and eggs? Mmm. I’m getting hungry just thinking about it!

These little sweet potato waffles are kind of like jumbo sweet potato waffle fries.

Being the chick-fil-a fan that I am, I am ALL about some sweet potato waffle fries!

3 Ingredient Cheesy Sweet Potato Waffles

Before taking Hello Spoonful full-time, I worked at a coffee shop in Atlanta that specializes in waffles.

One of those waffles was a cheesy waffle which we would turn into a cheesy waffle sandwich.

UMMM. YES PLEASE!

Each salad was also served with a mini cheesy waffle on the side. And those mini waffles are what inspired these 3 ingredient cheesy sweet potato waffles!

I, of course, took the concept and made it healthy, though. 😉

3 Ingredient Cheesy Sweet Potato Waffles with Avocado Dip

Can you use regular potatoes instead of sweet potatoes for these waffles?

Although I used sweet potatoes in this recipe, you could definitely use regular white potatoes or japanese sweet potatoes instead.

Personally, I prefer the taste of sweet potatoes, and love baking with them!

Some of my favorite sweet potato recipes are my Vegan Sweet Potato Pasta Sauce, Sweet Potato Chocolate Chip Muffins, Sweet Potato Breakfast Cookies, and my Flourless Fudgy Sweet Potato Brownies!

I love that sweet potato can be both sweet OR savory.

But enough about sweet potatoes, the real MVP of this recipe comes from the cheesy goodness thanks to Jarlsberg lactose-free cheese.

Savory Potato Waffles with Cheese

What type of cheese is Jarlsberg cheese you ask?

Many times Jarlsberg is marketed as Swiss cheese because of its characteristics (it has large irregular holes and a distinct nutty flavor), but it tends to actually be sweeter and stronger than swiss cheese!

It’s an all-purpose cow’s milk cheese that’s ideal for snacking, sandwiches, entertaining and cooking.

AKA it’s dang good!

What flavor is Jarlsberg cheese?

Jarlsberg is buttery, rich in texture with a mild, nutty flavor.

As said above, it’s similar to swiss cheese, but a bit sweeter and stronger.

It’s truly the perfect addition to savory waffles!

3 Ingredient Cheesy Sweet Potato Waffles

For these Savory Sweet Potato Waffles you will need:

  • Sweet Potato
  • Cheese
  • Eggs
  • Salt (optional)

Yep, that’s all! Pretty awesome, right?

You will also need either a potato masher or a food processor to mix the batter.

I used my ninja food processor because I’m lazy and didn’t want to have to put my arms to work.

I also wanted a smooth consistency and that’s easier to achieve with a food processor.

You have two options when it comes to preparing the sweet potatoes for this recipe.

You can microwave them or bake them in the oven.

I chose to microwave my sweet potatoes for 10 minutes, flipping halfway through.

You can also bake your sweet potatoes in the oven at 425F.

How to bake your sweet potatoes for waffles:

  • On a baking sheet, (lined with foil for easy clean-up if you wish) prick sweet potatoes all over with a fork.
  • Bake until tender, or until a fork inserted in the thickest part has no resistance, 45 to 50 minutes.

I’m impatient when it comes to waiting for my food to be ready which is why I microwaved them.

Cheesy Sweet Potato Waffles

Feel free to get creative with this recipe by topping the sweet potato waffle fries any way you please or by adding some fun things to the batter.

My personal favorite way is to top them with my creamy avocado sauce and turkey bacon. It’s delish!

Other ways to top your sweet potato waffles:

  • Add more cheese on top, melt them in the oven, and sprinkle with herbs
  • Turn them into mini chicken and waffle sliders
  • Top with cream cheese and smoked salmon
  • Top with chorizo, black beans, and avocado for a Mexican-inspired breakfast

How To Make Sweet Potato Waffle Fries:

If you want to turn this sweet potato waffle recipe in to waffle fries, simple reduce the amount of batter you add to your waffle iron.

Healthy sweet potato waffle fries dipped in egg yolk or ketchup sounds like a brunch lovers dream!

Ingredients
  

  • 2 Cups Sweet Potato, mashed
  • 1/2 Cup Cheese
  • 3 eggs Can do 2 eggs and 2 egg whites instead
  • Salt to taste

Instructions
 

  • Prepare your sweet potatoes by either baking them or microwaving them. If baking, preheat your oven to 425F. Pierce your sweet potatoes 4-5 times and bake in the oven for 45-50 minutes. If microwaving, pierce your sweet potatoes 4-5 times and microwave on a microwave-safe plate for 10 minutes, flipping halfway through.
  • Remove skin from sweet potatoes.
  • Add roasted sweet potato, cheese, and eggs to a food processor and mix until evenly combined. Season with salt as desired.
  • Preheat your waffle iron. Once heated, spray with cooking oil and pour waffle batter onto your iron. I used a mashed potato scoop to scoop the batter onto the iron and make sure the waffles were similar in size.
  • Remove the waffles from the iron and place them on a cooling rack. This will keep them from getting soggy.
  • Serve immediately with your favorite toppings, dips, or sides.
  • Store your waffles in a Ziploc bag, making sure all air is removed, in the freezer for future use.

  1. Used purple skinned white flesh sweet potatoes. The batter was more like a dough so had to thin it down. Served topped with picadillo, diced tomato and avocado. Thank you for the recipe, I’ll definitely make it again.

    1. I haven’t tried it but I don’t see why not! OMG, that’s a lot of sweet potatoes haha. I also have a sweet potato pasta sauce, sweet potato hummus, sweet potato brownies and lots of sweet potato muffins on my blog to help you use them up!
