Whole30 Meatloaf
Whole30 Meatloaf is the ultimate comfort food with clean ingredients and perfect for weeknight dinners because it’s ready in just one hour!

When people think of comfort food, most of the time it’s loaded with fat, butter, extra carbs, and more unhealthy ingredients. PSA: It doesn’t have to be this way!
There are tons of healthy comfort foods that can be re-made using simple ingredients and most of the time they taste better than the traditional version.
Today we are cooking up a healthy meatloaf that I guarantee will be a hit with the whole family.

Whole30 Meatloaf Ingredients
Meat: You can use ground beef or turkey. I recommend a leaner cut to prevent excess grease from baking out, and because it’s healthier.
Italian seasoning
onion
mushrooms
almond flour – this gluten free option is taking the place of breadcrumbs, which is what would normally be used to bind the meatloaf.
Tomato paste
Coconut aminos
Salt + pepper to taste
Whole30 approved ketchup (primal kitchen brand) for topping. This is optional but really tasty!

How to Make Healthy Meatloaf
Line a loaf pan with parchment paper or spray with non-stick cooking spray. Preheat the oven to 350 degrees.
In a large mixing bowl, add the ground beef (or turkey) and mix in the Italian seasoning, salt, and pepper.
Mix in the onions, mushrooms, almond flour, tomato paste, and coconut aminos. Be careful to not overmix.
Add the meatloaf mixture to the pan and press it down so it’s even and in a loaf shape.
Spread the Whole30 ketchup across the top of the meatloaf and bake for 1 hour.
Once it’s finished cooking, allow it to rest a few minutes before serving.

What Should I Serve it With?
Because this is such as classic and traditional recipe I recommend Green Bean Casserole, Mac and Cheese, or Roasted Brussels Sprouts.
Storing Instructions
Store in the fridge in an airtight container, or wrap the loaf pan in foil for up to 4 days.
You can freeze the loaf before baking, so you have an easy meal for later.

Common FAQs
What ingredient keeps meatloaf from falling apart?
In normal recipes it’s the egg (or milk) and breadcrumbs. For this Whole 30 version, it’s the almond flour.
Why does my meatloaf come out mushy?
Sometimes meatloaf comes out mushy because the meat mixture was overmixed or the ingredients were measured wrong. It’s important to have the right ratio of wet and dry ingredients. If you follow my version, your meatloaf should come out perfect!
Why is my meatloaf still pink?
If the meatloaf has reached an internal temperature of 160 degrees, it could just be the type or brand of meat you are using. As long as it’s fully cooked before serving, you should be fine.

Should I drain the grease from my meatloaf?
When using a leaner cut of beef or turkey, there shouldn’t be much grease. Once the baking time is down to the last 15 minutes, if you notice a ton of grease pooling, yes go ahead and drain that. Then finish cooking.

Ingredients
- 2 lbs beef or turkey
- 2 tsp italian seasoning
- ½ cup diced onion
- 1 8 oz can mushrooms diced
- ⅓ cup almond flour
- 1 tbsp tomato paste
- 2 tbsp coconut aminos
- Salt + pepper to taste
- Optional: ½ cup whole30 approved ketchup primal kitchen brand for topping
Instructions
- Preheat your oven to 350 and prepare a loaf pan with parchment paper or spray with cooking spray.
- Add your beef and seasonings to a bowl and mix until evenly distributed.
- Add the remaining ingredients and mix until well combined.
- Add to your prepared loaf pan. Pour ketchup on top and spread evenly across the loaf and bake for 1 hour.
- Allow to cool for a few minutes. Slice and serve!
