Gluten Free Banana Cake

This Gluten Free Banana Cake is moist and delicious, topped with a healthy homemade cream cheese icing that is sweet and creamy!

So you know any chance I get I put bananas in baked goods. One reason is that it’s naturally sweet, which means we use fewer store-bought sweeteners. The other reason is that I am terrible about the bananas getting soggy so I HAVE to use them at that point! You know what I’m talking about! 

Some people think that gluten free baking is hard or you have to be an expert. NOT TRUE! Here’s the deal, most baked goods use flour. When you use oat and almond flour you are able to keep the recipe gluten free, but this is different than when using all-purpose. 

So I can guarantee you that all of my recipes are tested by yours truly, and if you follow the instructions you should have perfect gluten free baked goods every time! 🙂

Almond milk – if you have another favorite you can use that instead

Lemon juice

Oat flour 

baking powder

baking soda

salt

cinnamon

Banana – it needs to be ripe so it’s sweeter!

Honey

Eggs

Coconut sugar

Coconut oil – be sure you melt and cool it before adding it in

Vanilla extract

What You Need For Healthy Cream Cheese Frosting:

Cream cheese

Maple syrup

Greek yogurt

Vanilla extract

 

What Can You Substitute for Oat Flour?

If you don’t have any oat flour but have gluten free oats, you can put these in the food processor or blender and ground into flour. You will need about 3 cups of oats for the correct measurement for this recipe. 

 

You can also swap the oat flour for almond flour at the same measurement and keep the banana cake gluten free.

How To Make a Banana Cake Without Gluten 

Spray your baking dish or pan with non-stick cooking spray or parchment paper, then preheat your oven while you are mixing your ingredients. 

You will also want to melt and cool your coconut oil.

Whisk together the milk and lemon juice in a small bowl and set to the side. 

Add the oat flour, baking soda and powder, salt, and cinnamon in another bowl. 

Mash the bananas and set them aside. 

With an electric mixer, cream together the coconut (melted and cooled) oil and sugar. Then mix in the eggs, honey, and vanilla.

Once the mixture is creamy, fold in ¼ of the dry ingredients, being careful not to overmix. Then add in a ¼ of the milk/lemon mixture and mix again. 

Keep repeating this process, alternating between adding a ¼ of the dry ingredients into the wet and then the ¼ of the milk and lemon until everything is mixed well. 

Using a spoon or spatula, fold in the mashed banana last. 

Pour the batter into the baking pan and bake for 45 minutes at 350 degrees.

To Make the Cream Cheese Icing

Using a hand mixer combine all ingredients and mix until it’s smooth and creamy. Place the icing in the refrigerator while the banana cake is baking. 

Icing the Cake

Let the cake cool on a baking baking rake for about an hour before you add the icing. Adding the icing before it cools leads to a big mess and it will melt it. 

Afterwards, you are ready to slice and serve!

Gluten Free Banana Cake

Ingredients
  

  • 3/4 cups almond milk or milk of choice
  • 2 tsp lemon juice
  • 2 3/4 cup oat flour or ~3 cups rolled oats ground finely
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1 cup banana mashed and ripe (~3 ripe bananas)
  • 1/3 cup honey
  • 3 eggs
  • 1 cup coconut sugar
  • 1/2 cup coconut oil melted and cooled
  • 2 tsp vanilla extract

Healthy Cream Cheese Frosting:

  • 4 oz cream cheese
  • 3 tbsp maple syrup
  • 1/4 cup greek yogurt
  • 1/2 tsp vanilla extract

Instructions
 

  • Preheat the oven to 350F and line a 9x13 in dish with cooking spray and parchment paper.
  • Whisk milk with lemon juice and set aside.
  • Mix oat flour, baking powder, baking soda, salt, and cinnamon in a bowl.
  • Mash bananas in a separate bowl and set aside.
  • Cream together coconut oil and coconut sugar with an electric mixer. Mix in eggs, honey, and vanilla extract.
  • Fold in 1/4 of the dry ingredients, mix them until combined, and then add 1/4 of sour milk then mix again. Repeat alternating dry ingredients mix and sour milk until everything is incorporated.
  • Fold in the mashed banana using a spatula (not a hand mixer). Pour mixture into your dish and bake for 45 minutes or until an inserted toothpick comes back clean.
  • While your cake is baking, make the frosting.
  • Add all of your frosting ingredients to a bowl and mix with a hand mixer until evenly combined. Store in the fridge (covered) while you wait.
  • Let the cake cool for one hour on a cooling rack, then add your frosting, slice, and enjoy!
  • **Store in the fridge.
