Healthy S’mores Cookies (Gluten-free, Flourless)
You have to try my Healthy S’mores Cookies! No flour needed plus gluten-free! Let’s not forget that they are moist, chewy, and absolutely delicious!

Are you ready to take a ride back to your childhood? That’s exactly what these cookies make me think of! As an adult you may not make smores that often unless you have kids.
The great thing about these are that they have all of the traditional flavors you are used to without the hassle of dragging out the fire pit, building the fire, then smelling like a campfire for two days!
These babies are ready in less than 20 minutes, way more healthy than your average smore, and your kids will never know!

What You Need to Make Healthy S’mores Cookies
Cashew butter – the ingredients should literally be cashews and salt.
Coconut sugar
egg
vanilla extract
baking soda
Sea salt
Marshmallows – I used mini, but you can also use large ones and cut them into quarters!
Chocolate chips or chunks
Graham cracker sheets – gluten free

How To Make Flourless Gluten Free S’mores Cookies
Go ahead and preheat your oven and line a baking sheet with parchment paper or a silicone baking mat.
Mix together the cashew butter, sugar, egg, vanilla, and baking soda by hand or by using an electric mixer.
Stir in the chocolate and marshmallows then fold in the crushed graham crackers.
Use a cookie scoop or spoon to scoop out the dough and roll it into a ball. Try to make sure you get a few marshmallow in each cookie! I used a cookie dough scoop to make sure each cookie was roughly the same size.
Bake, then sprinkle with salt! Once they are done, let them cool completely before serving so they don’t fall apart.

Are Marshmallows Gluten Free?
There are lots of brands of marshmallows that are made without gluten but you will definitely want to check the label. To do a little research ahead of time, Very Well Fit has this awesome guide with several different options!

Gluten Free Chocolate Options
So pure chocolate is naturally gluten free, but when you are on the candy and baking aisle things can be a little overwhelming! Lily’s chocolate is actually all gluten free and certified, so you can always get that in confidence without checking labels!

Healthy S’mores Cookies
Ingredients
- 1 cup Cashew butter Can sub other nut butters but cashew is the most mild
- 1 cup Coconut sugar
- 1 Egg
- 1.5 tsp Vanilla extract
- 1/2 tsp Baking soda
- 1/2 cup Mini marshmallows
- 1/2 cup Milk chocolate chips Can sub any chocolate but milk chocolate best replicates a traditional s'mores!
- 2 GF graham cracker sheets crushed
- Sea salt (optional for sprinkling on top)
Instructions
- Preheat your oven to 350F and line a baking sheet with parchment paper. Spray with cooking spray.
- Next, mix your cashew butter, egg, sugar, vanilla, and baking soda in a bowl. Once a dough has formed, fold in your chocoalte chips and marshmallows.
- Scoop out your cookie dough using a spoon or cookie scoop and roll it into ~2 tbsp sized balls. Roll the cookie dough in your crushed graham crackers and place on the lined, greased baking sheet.
- Bake your cookies for 12-15 min or until the edges are lightly crispy and tops begin to brown.
- Carefully remove from the oven and allow to cool before serving.
Can I substitute a different nut butter for cashew butter? I normally have peanut butter on hand!
Hi! Yes, you can use any nut butter! Cashew is just the mildest nut butter which is why I used it. You will definitely taste the peanut butter, but as someone who loves peanut butter, I wouldn’t mind that at all! 🙂
