Peach Baked Oatmeal

Peach baked oatmeal can be enjoyed as a healthy breakfast or delicious dessert! It’s also gluten free and a great way to use up extra fresh peaches!

While a bowl of warm oatmeal really warms the soul, it’s kind of annoying that you have to make it in single servings every morning. This is one reason why I love baked oatmeal! You can make it ahead of time and it still has the same great taste when you are ready to serve. 

As I mentioned, it’s such an easy way to use up ripe peaches, but don’t forget to give my gluten free peach crisp and caramelized peaches a try. You may have to buy another batch!

Ingredients Needed 

  • rolled oats – be sure to check the label to make sure they are gluten free
  • chia seeds
  • baking powder – you want the baking powder to be fresh so the oatmeal doesn’t come out flat
  • cinnamon
  • salt
  • almond milk – go with an unsweetened variety, but any kind of milk will work
  • plain greek yogurt – avoid using flavored yogurt
  • egg whites
  • pure maple syrup – honey can be used in place if desired.
  • pure vanilla extract

How to Make Peach Baked Oatmeal 

Grease an 8×8 baking dish and preheat the oven to 375 degrees. 

Combine the rolled oats, chia seeds, cinnamon, salt, and baking powder in a large bowl. 

In a separate bowl, whisk together the almond milk, egg whites, greek yogurt, syrup, and vanilla. 

Gently add the dry ingredients to the wet and stir to combine. 

Fold in the diced peaches. 

Bake for 40-45 minutes uncovered or until it is lightly browned. 

Cool for 5 minutes then slice and serve!

Can You Use Frozen Peaches in Baked Oatmeal?

We love using fresh, but you absolutely can use frozen. Just be sure they are thawed completely and you drain off as much liquid as possible.

You can also use canned peaches. These should be drained as well and only grab the ones that in natural juices versus the sugary syrup. 

Tips for Making 

Do not substitute any other oats for the rolled oats. These work the best.

Feel free to add a few nuts or fold in chocolate chips just before baking.

Topping Ideas for Baked Oatmeal 

  • Drizzle with seed or nut butter 
  • Add a dollop of Greek yogurt or whipped cream. 
  • Top with fresh fruit and berries. 
  • For added sweetness, drizzle with more maple syrup or honey. 
  • Granola 
  • Chopped nuts or seeds
  • More chocolate chips or cacao nibs

How to Store

Keep leftovers in an airtight container in the refrigerator for up to 4 days. Serve warm or cold. I like to bake mine in an 8×8 pyrex with a lid for easy storage!

  • 2 cups rolled oats
  • 1 tbsp chia seeds
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/4 tsp. salt
  • 1 cup almond milk or milk of choice
  • 1 cup plain greek yogurt
  • ½ cup egg whites
  • 1/3 cup pure maple syrup
  • 1 tsp pure vanilla extract
  • 1.5 cups diced peaches

Instructions
 

  • Preheat oven to 375F and grease an 8×8 casserole dish.
  • In a large bowl, mix together rolled oats, chia seeds, baking powder, cinnamon, and salt.
  • In a medium bowl, stir together the almond milk, greek yogurt, egg whites, maple syrup, and vanilla.
  • Add the wet mixture to dry mixture and stir until combined.
  • Fold in the peaches.
  • Pour mixture into baking dish and press down lightly.
  • Bake, uncovered, for 40-45 minutes, until lightly golden brown.
  • Let cool for 5 minutes, slice, then serve!
  • Store in refrigerator.
